“A daily routine of dashi-related cooking is important.”

Active creative director Shigeki Hattori confronts home cooking as a new househusband.
In this interview, we asked him about his new findings during his life as a homemaker, the merits of using dashi, his ideas on Osaka food culture, and the future of dashi cooking.
In the latter half of the movie, he demonstrates how to cook simple dashimaki using water-infused kombu dashi as a base, as well as his original recipes using different dashi of iriko and katsuobushi.
He appears to eyeball the quantities of ingredients, yet the results taste amazingly perfect.
This movie thoroughly introduces a highly flexible dashi cooking routine, which takes a little time and effort for the family.

Shigeki Hattori

Creative Director/Designer. Born in Okasa in 1970. A director of creative unit "graf" which designs and practices various elements of life from a manufacturing aspect. He has been developing new areas of activities, utilizing the environment and characteristics where different industries gather. He produces designs associated with architecture and interior as well as brand direction, and in recent years, he is also demonstrating his ability for social activities such as regional revitalization. A professor at Kyoto University of the Arts.
